Carlo Papagni

Carlo’s two great passions are food and football.  His parents owned a traditional trattoria in Milan so, growing up, he literally learned about cookery at his mother’s knee.  After his soccer career was cut short by an injury he worked for Benetton before turning back to his great love, Italian cuisine. 

The Boscoreale opened in June 2002, specialising in dishes from southern Italy.  Although Carlo’s roots are firmly in Britain now, he frequently travels back to Italy in search of new recipes and ingredients.  This is reflected in the current menu, featuring modern creations as well as classics from all over Italy.

Paola Sibilla

Paola grew up in the family restaurant in Turin, learning her first cookery skills from a really creative chef, her mother.  She then gained the Master Chef in Italian Cuisine Diploma at the famous Alma College in Parma.  Paola then continued her education in the kitchens of some of Italy’s most prestigious restaurants before moving to Britain. 

Her first job here was as head chef at Al Volo and she joined Ristorante Boscoreale in 2008 from the same position at L’Incontro in Pimlico.  As Executive Chef here, Paola has created a new menu which includes many of her own creations based on the cuisine of northern Italy, where she grew up.  There are also some intriguing twists on popular Italian favourites.




 
   

Luca Belenchia

Luca has been involved in running top quality restaurants in Surrey his whole working life.  After managing Tony Tobin’s The Dining Room in Reigate Luca helped set up the popular Two to Four in Dorking.  With a father from Ancona in northern Italy, it was only natural that the next move should be to Surrey’s best Italian restaurant.

He joined Ristorante Boscoreale in 2007 and has quickly made friends with both existing and new customers.  Our popular musical entertainment and special events such as Frank Sinatra and Dean Martin tribute evenings are also Luca’s responsibility.  On a day-to day basis, Luca is here to see that our guests are made welcome and enjoy their visit in every way.



 
   

Nordeen Ramsi

Nordeen has worked in a wide range of front-of-house roles in restaurants all over Europe.  He joined Ristorante Boscoreale at the very start in 2002 and has played a major part in its initial and continuing success.  His knowledge of wine is extensive and he is always on hand to advise and help you select from our extensive wine list and menu.

He is very popular with all the customers who appreciate his highly attentive but unobtrusive and friendly service.  It is a real skill to be invisible until a customer wants something and then to be there like a shot.   However it is one that Nordeen has perfected over the years and is greatly appreciated by diners at Ristorante Boscoreale.
